We racked and bottled yesterday. How does a sparkling late-season honey, raspberry, ginger, orange mead sound? The aromatics are outstanding. Slightly lacking in body. Color is a bright red. The orange, using dried peel from Penzey is there nicely. It reminded me of the tangerines my mother would put in our stockings at Christmas. The honey added at bottling should add some body that the carbonation will even out.

Give me thirty days and I'll post a review. The Apricot ginger mead in my hand right now is/was outstanding. Only one foamer in the batch so far.

Send one to Bloofy. Bloofy will drink anything. Once!

Had to crack one last night. I couldn't wait. Ginger is a bit fiery but will fade and balance. The orange is crisp and refreshing. Just enough fizz to tickle.
