Craig's Twice Baked Potatoes

This is my personal recipe. I have never had anyone not dig in for seconds!!!

Bake 4 large baking potatoes at 400 deg for approx 1 hour or until full baked. As soon as potatoes are done remove from oven and cut in half length wise. Scoop potatoes out of skin into a large mixing bowl. Add 2 tbls of butter, 1 cup sharp cheddar cheese, 4 heaping tbls of sour cream, 2 cloves of minced garlic. Mash with a potatoe masher. Then add 2 tbls of Mrs. Dash southwest seasoning, 1 tspn of Ancho Chili powder, salt, fresh ground peper (to taste). Take a hand mixer and mix until smooth. With a large spoon, spoon the potatoes back into the skins and set on a cookie sheet, once all eight skins are filled sprinle more chees on top. Put in a 350 deg oven for approx 30 more minutes. Then eat away.

I have never not seen people go back for a second including kids. This should feed 8, but normally only 4-5 people. For anyone concerned this is not at all spicey, just full flavored. If you are concerned just subtract 1 tablespoon of the Mrs. Dash seasoning.

I made these a few weeks ago, and my wife and kid just loved them!
 
My recipe is basically the same (slightly different list of add-ins) but I do mine on the grill. Microwave the potatos (approx 15 minutes for 4) with some holes poked in them. Brush with olive oil, shake on some kosher salt. Grill for at least 10 minutes to help get the skin even crispier. Then prep them as above and throw back on the grill while you cook some steaks.
