Tilapia fillets

Gonna cook my first Tilapia fillets this weekend. I will most likely be cooking these indoors and not on the grillDome so any quick suggestions?
 
I enjoy them pan seared in cajun seasoning, or broiled in White Wine with lemon juice and butter. Season to taste with the broiled version.
 
here is one of my favorite things to do with tilapia. dip it in milk and let it drip for a moment (maybe 5 minutes tops)
season it lightly with pepper. Bread it with grated parmisian pasrlsy, and whatever other italian style herbs you want.

super heat a pan as if you are going to sear a steak and drop in the parmisian encrusted tilapia. cook half way and flip. the side you plan on serving should go down first to get that nice crisp crust.

i usually server that with a vodka sauce.
 
Sauteed in butter and olive oil w/ jalenpenos, shallots and white wine.
 
One of my favorite recipes for the oven is as follows:

1. Needed:
* Cookie Sheet
* Sheet of aluminum foil (long enough to fold over and make a pouch big enough to hold the fish in a single layer
* Rosemary sprigs - to taste, but I use quite a bit
* 2 or 3 lemons
* Orange juice

2. Steps
* Preheat oven to 450
* lay foil out and curl edges up and seal them
* slice the lemons (not too thin) and lay them on the foil in a single layer, leaving space between them
* put some sprigs of rosemary in between some of the lemon slices
* pour orange juice in until it comes to the top of the lemons
* lay the fish on top of the lemons, sprinkle with salt and pepper and lay some more rosemary on top
* seal the foil
* place in the oven on the cookie sheet and cook 10 - 15 minutes

Hell, crabs eat everything that dies in the ocean, and I don't hear anyone complaining.

The Tilapia turned out pretty well. I breaded them with some Panko and baked them in the oven. They provide a blank canvas and will probably be very good with Teriyaki, Mojito, etc.

I don't think they do well with breading cause they are so lite. I like mine with just a bit of garlic and butter. I usually do them on the grill.
 
The breading, even though the Panko is pretty light, will dry them out. They didn't reheat well the next day.

I plan to be back outside cooking for this weekend. I have to cook a leg-0-lamb for my mom for Easter and I haven't even decided what we are going to have here.
