Kelvin's House
I made some interesting mushrooms last night. There are still a lot of things that I can't quite have yet so I came up with this.
6 Baby portabella caps rinsed
a few chunks of cooked chicken (maybe 1/8 of a cup)
1/8 cup of Blue cheese
two Green onions
three cloves garlic
Olive oil
favorite spice mix. I like a south west.
In a bowl place the mushroom caps and coat with olive oil, add the garlic crushed and spice mix to taste toss to coat.
in a food processor (I use the magic bullet) combine the chicken blue cheese and Green onion.
Then take the mushroom caps and place them crown up on the grill, for about 5 to 7 minutes. Flip the mush rooms over and place a spoonful of mixture and close grill and cook another 5 to 7 minutes.
Remove from grill and enjoy, I served Mine with a fat free Wasabi May that I had made the night before. Just a 1/2 cup of mayo and a dab of wasabi. mix and chill These were fantastic.
