Actually, it has nothing to do with weight. It is because of the height of the standard countertop / table. As the bread falls it rotates and because of the height of the fall and the speed of the rotation, it nearly always lands with what used to be the side facing up, now facing down. You can draw an 'x' on one side and do the same thing and most always it will land 'x' down.

sorry for the digression. too much time and useless knowledge. I can't claim it as my own though, I saw it on mythbusters.
