The wife is gone on a canoe trip this weekend, so I am all alone. Just me and my humidor. I just finished dinner. I was looking through the freezer to see what was left of last years hunting seasons, I found a frozen pheasant, so thoughts ran through my mind as to what to do with it. It could smoke it, roast it, stuff it or BBQ it. I opted for the BBQ. I fired up the BBQ, and began to quarter the bird. I made a Bourbon-chipotle BBQ sauce, and thought of a side dish. Morels!!! While the BBQ sauce was simmering, I re-hydrated some morel mushrooms from the 2005 season. I found some heavy cream in the fridge, and made a morel mushroom bisque. I lit up a La Gloria Cubana Serie R 4 and threw the quarters on the grill. Basting and smoking. This is the life! Poured a tall glass of Belgian wheat beer and kicked my feet up while the bird cooked to perfection. the heat wave we had in the recent days is now gone, leaving Michigan with a tolerable 79 degrees. I think you can all can finish this story for yourself. I'm going smoke!!!! All in the life of a Firehouse chef....... Ryan
 
Right on brother! Thinking of doing something very similiar here. The little lady is working late, and It will just be me and the dog! 8)
 
Well maybe one day I can have everyone here for a sit-down-bbq. I'll show you how we do it in the "D"...... If you have never experienced Firehouse cooking, well, it's a whole different ballgame. Hearty, fattening, and Deeeeelicious!!!

Where to you get your pheasant. I make 2 trips a year to preserve and usually come back with atleast 10 to 20. It is in Indiana is about a 5 hour trek from Chi town. If you want in on the next trip I am headed out in October or November.
 
MAc, not only is your girl hot, you hunt too!! In Mich, we have a couple spots to go, usually Sexy pheasant Farm, or Rooster Ranch. I hunt with my lab, and I have relatives who have NAVHDA champion german shorthairs. I would definitely take a trip out with you, or you are more than welcome to Michigan. If you guys ever make it to Long Island, take a ride on the Meadowbrook Parkway. There are usually 20-30 pheasants just hanging out between exits M5-M6 :)
 
I had a friend that used to raise birds.
I had this Fly tying school for kids and he would bring me birds all the time. I'd skin them & eat them every week.
Damn I miss that!

Not a lot wild pheasant around here any more - you see a few here and there, but mostly stocked birds.

Nice dinner story - 7:45 and I'm hungry!
 
Thanks CC. You taught a fly tying school? I've been tying for quite a few years. As you know, Michigan has some of the world's most Famous rivers. AuSable, Pere Marquette, Manistee, etc.
 
We'll over here in PA. I'll hit the state game lands in October, take 2 ringnecks which is a day's limit. Then head up to Erie and camp by one of the creeks. Pheasant and Lake Run Steelhead on an open fire!

Not to hijack Capt. But how does the wrapper on those Series R's hold up for you. I've had problems with them. You smoking natural or maduro?
 
You firemen can cook, the only thing us EMS guys know how to do is order fast food.

I have found with the Serie R you have to have them at a little higher RH of 73% IMHO. I prefer the natural. Also, the glue they put on the bands is heck to get off. I usually just leave the band on, so I don't risk tearing the wrapper.

P.S. I think we all might have to plan a Cigar.com pheasant hunt this year!!
 
Thanks Capt. That is my likely problem.
I had a bad analog and was way low on RH, down around 50%.
I've now got things stabilized @ 65%
 
A busy day here at work. 5 rescue calls and a good dwelling fire. So for tonights dinner here at the station, I wanted something easy. I went with an Italian theme. We made meatball subs with marinara sauce, farfalle pasta in a bacon alfredo sauce and salad. For dessert, it was a La Gloria Cubana Serie R 4. Ahhhh, I love my job!!!


Update: It is now 0328 here in Mich, and I still haven't been to bed. I have been out on three rescues since 0032. I sure am going to be a grouch in the morning!!!
 
Today's lunch

Once again, it is way too hot here to fire up the grill, so I decided on cooking indoors again. I decided for a little country type theme today. I made white bean chicken chili, with lots of cumin and peppers. I made a loaf of freedom bread that was so long, it barely fit in the oven..hehehehe. For drinks today, I made a nice southern sweet tea. And lastly, for dessert a blackberry marbled vanilla cheesecake. I think am getting too much fat lately. I think for dinner I will have a tea salad and water.....NOT!!!!!! Its pork ribs and wilted lettuce with bacon dressing!!!!!!!!!!!!! Ryan


Dessert will be a Partagas Padre tubo, with the sweet tea. YUMM!!
 
Heroes and food. I love it. Thanks to all the firefighters in the world, especially the USA, for doing what you do. And thanks to the Food Network for putting firehouse cooking front and center. Keep on keepin' on, Capt. Keep on making me hungry, too. :cryinlaugh:
 
Dinner

It was still hot out, so I decided to save the ribs for Thursday. I sweat enough as it is, I don't need to sweat while I am cooking. It wasn't a very exciting dinner, we finished the chili, and I still made the wilted lettuce. Cheesecake doesn't set too well in this heat, so it's still in the fridge. I think we will make Boston coolers. (vanilla ice cream and vernors, blended).. For those who don't know, Vernors is a Detroit made ginger ale with a bit of kick. I didn't smoke the Partagas either. I went with a 5 Vegas gold torpedo. Nice, mild smoke. Enjoyed it with the cold sweet tea. The tea was a bit too much, so I finished it with a coke. The amazing thing here, I can leave my humidor unlocked, and no one will touch my smokes. But if I leave a pair of gloves on the truck, they magically disappear. Good night to all!!!! Ryan
