First off: I'm not hear to change minds. If you like meat and choose to eat it, fine. It's just not for me.
But, I do worry for your safety, just like I worry about my dad's and brother's safety. I never give them flack for eating meat. However, I'm really glad that they have cut down on eating red meat (we have a family history of heart disease.) My brother eats boca burgers from time to time (all on his own.)
The thing about meat is that you have to be so careful about how it's handled. You can't use the same cutting boards (or knives) for raw meat and veggies. You need to make sure it stays at a safe temperature (that's why I made the comment about letting it rest for four hours at room temp.) You don't really know if the meat has had adequate storage before you. Not to mention if the cow was treated with hormones.
You need to make sure it's completely cooked (rare or medium rare meat scares me.) I took one of those food safety workshops (the kind that's a one day shot) I don't claim to be an expert but, I just remember a few of the things they said. And, I hope you take precautions when handling meat. Read your labels. Use different cutting boards and knives for meat. And, use a thermometer.
I remember meat (it's been about 15 years.) I liked it, then.
So, I know what you guys are saying about it tasting so good. But, I feel like I don't have to so, I don't.
