First off: I'm not hear to change minds. If you like meat and choose to eat it, fine. It's just not for me.

But, I do worry for your safety, just like I worry about my dad's and brother's safety. I never give them flack for eating meat. However, I'm really glad that they have cut down on eating red meat (we have a family history of heart disease.) My brother eats boca burgers from time to time (all on his own.)

The thing about meat is that you have to be so careful about how it's handled. You can't use the same cutting boards (or knives) for raw meat and veggies. You need to make sure it stays at a safe temperature (that's why I made the comment about letting it rest for four hours at room temp.) You don't really know if the meat has had adequate storage before you. Not to mention if the cow was treated with hormones.

You need to make sure it's completely cooked (rare or medium rare meat scares me.) I took one of those food safety workshops (the kind that's a one day shot) I don't claim to be an expert but, I just remember a few of the things they said. And, I hope you take precautions when handling meat. Read your labels. Use different cutting boards and knives for meat. And, use a thermometer.

I remember meat (it's been about 15 years.) I liked it, then.
So, I know what you guys are saying about it tasting so good. But, I feel like I don't have to so, I don't.

I have been a vegan , I have tryed it a few times , one time I went almost a week but a roadside Chicken BBQ distroyed my sence of well being with an intoxicating aroma ,,,,, the wonderfull aroma of seared chicken flesh over an open fire with a hint of BBQ sauce in the air, it ws like magic, like a beautiful woman wearning nothing but perfume . I was lost to the savage lust for meat, BBQ sauce & cold beer , ahhhh I ate till I was beyond full, drank till I was beyond the legel limit , Then & only then did I get the pecan pie & coffee then I reached for my 3 finger cigar case in my shirt pocket, licked the BBQ sauce off it ( you can dress me up but you cant take me out in public ) hahahaha , & pulled out a BIG @$$ cigar , I dont remember what it was , it was a long time ago, might have been a Monte or a Fuente, could have been a Partagas, but I digress, sat at a picnic table for a few hours to pass the effects of the 4 or 5 beers, ok 8 or 10 beers if you must know the truth, , between all the beer & all the coffee my kidneys sure did get a work out hahahahaha . there is notheing wrong with not eating meat, or fish, , I was able to do it , for a short time & will go back to it a few times a year, for a few days at a time, but I love my Beef, weather it be a roast, ground or a slab of tenderloin on the grill, rare is the way the only way, I know the farmer , I get my beef right from the field, I see them every day in the field next to me & I eat them. I dont worry about mad cow, he grows is own food for the beef stock, lots of grass , grain & no hormones injected into the animals, gooooood eating , nothing but prime angus beef, Yummmmmmmy , & every once in a while a little VEAL, still all pink & soft , ohhhhhh I get excited just thinking about it !

I have to answer Brenda. I do have concern about red meat. I eat it 3 times a month, sometimes more sometimes less. When you season meat with salt and oil it acts like a preservative. By controlling th PH with the salt you retard bacterial growth. Salt lowers the PH balance taking it out of the danger zone. It's great that you pay close attention to the way you handle food. Cross contamination is a huge problem. Cutting boards are very dangerous and should be washed often. The media has a tremendous effect on how we live. All this mad cow and samonila attention is good info to know but it is also very rare. There has never been a case of mad cow from meat to human reported. The media makes it sound like it happens everyday. I understand your concerns. I have also taken food safety. I feed 1000's of people per month and take my responsibility very serious. I have been in food service for 29 years and I have seen alot. So with that said.......Relax, enjoy life, eat good food and smoke great cigars. There are no promises about tomorrow here on earth. Live! it beats the alternative.

foodislife, I know you're a pro and I'm sure you know all about the dangers of improper food handling. But, some folks might not be so careful and I just want to make sure that you meat eaters are safe.

Heck, I know I don't live as healthy as I could (I drink, I smoke, I don't excercise like I should.)

Life is too short. Enjoy it while it lasts! :wine:
 
I taught a food safty course in the past & I have all the seperate cutting boards & all the latest cleaning supplys, but when I was a kid, learning to cook , there were 2 cutting boards, one for fish & one for everything else, , seams like a long time ago, they were maple, now they are plastic, , I like the old wood boards my self, they just look like Home ( my home was my grandmothers professional kitchen when I was a weeee lad) as a retired chef I do miss the day to day hustle & bustle of the kitchen , but my old body isnt missing the long hours , hard floors , heat from the broiler, chill of the freezer , or the arrogent customers who want everything compped when the bus boy didnt get the water glass filled fast enough .or the Dish washer shows up drunk or not at all, that part I dont miss.

Well.....this has been a wild ride. I too like my beef, we bought half a Red Angus Steer last winter, and are now in the last few pieces of it. The farmer had fattened it for the US market, a little more fat and marbeling than what Canadians like - it has been fantastic!!!! I have always enjoyed any cut, and we have had them all in this purchase. Still have a few rib roasts to do, will probably do one this weekend.

That said, I understand where Brenda is coming from, and apreciate all the veges too. There is nothing like than a good tofu stir fry with perhaps a little bit of chicken or shrimp thrown in to give it a bit of jazz.

As for that Peta video, I wanted to barf. I have never been a fur wearer - Poly and Gortex is MUCH better, and if PETA can stop mistreatment of those animals, I say more power to them!
 
I dont have the cash flow to have real fur , but I do have real leather , , shoes, belts, vest,gloves & jacket, , I didnt watch the peta video but I have seen some of there propaganda, I like meat, I like fish, & if I had enough money I would have a fur lined .......... hahahahaha you know what I was thinking hahahaha !!!

Alton Brown is a god at my house. Everything stops when his show is on. My kids love him, and its amazing how much you can learn from watching him. I do 99% of the cooking at home, and I use a ton of his recipies. I wonder if he enjoys cigars??
 
For all you Alton Brown lovers, you REALLY need to get his book, titled "I'm just here for the food". It is an awesome book, and a GREAT bathroom read. Not to make everyone jealous, I have 88 episodes of Good Eats recorded on Tivo........

Alton stared out as a film maker, he had been making movies & documentry for about 10 years when he went to cooking school in Vt. , his show is an extention of his comic side & his love for food, I wish i had co authored his book, dammm it would be nice to go to the mail box & get a check every month , Ohh wait, I do that now, Never mind ! hahahah
