I just replaced the wire shelves in my 28 bottle Avanti wine fridge on Friday with Spanish Cedar. I put in for shelves that are 8 inches wide by 7/16 thick. My Oasis plus can not keep the humidity above 60 for long. Can the wood be soaking up that much moisture?

yes.
When I was seasoning my desk top humidor it took almost five days before it would hold humidity.
on the other hand I was using a dish of water and not an active humidification device. Everyone is always excited to put smokes in a new humi(fridgi)dor. give it more time. Good things come to those who wait.
just my opinion.

A plate with a damp (clean) sponge on each shelf will help the oasis
maybe an over nighter to speed things, but time is good!

Yes. My two trays did this too. I put two juice glasses of distilled water in there with the oasis and it helped. Its nothing to worry about as the decrease won't last and isn't too big of a shock to the cigars.
