Road Kill Possum
Get your self one or 2 road killed possums , & cleam the guts out of them & skin them, , dust them in flour salt & pepper, brown them in lard , in a cast iron durch oven, remove them when brown & set aside, add to the pot a bunch of sliced onions carrots & celery, brown them till the onion is soft & add the garlic (about 6 or 7 crushed cloves,) then add the browned possum to the pot, cover with beer & put it all in a 300F oven for a few hours, ( 2 or 3 ) , then add some quartered red potatoes (unpealed ) & put it back in the oven for 1.5 hours, remove all the contents from the pot & boil down the stock in the pot, thicken as you like , serve it hot with some biscuts .. OH it'll be a clean head shot. If I can't get a clean shot off from 20 yards out I might as well sell my arsenal :lol:

I like the recipe Vince, but the whole choice of protein has me a little hesitant. Next thing you know I'll be grilling gophers, sauteing squirrels, and cold-smoking coyotes...not gonna happen!


We had another jazz concert at the winery today so it was all hands on deck. Lunch for 265 plus the owner's party of 20 which always requires a special menu. Mission completed even though the majority of our produce was wiped out due to yesterday's huge wedding party. We were also open for dinner which I think should be eliminated on concert nights because we had a dinner rush of SEVEN people!! I was falling asleep on the line :lol:

But now I'm going to wash the kitchen off of me, then kick back, relax, have some scotch and a 100 Años Belicoso.
 
7 for dinner , dammmmm a busy place, but then you need to recharge the batterys , with a lunch like you had, nothing better than a slow dinner ! at lest you didnt run out of Food ! hahahah Enjoy, Vince
 
Yeah it was a very slow night. The problem is that potential customers see the packed parking lot and don't bother finding out if there is a table available inside. But it was cool. I managed to finish all my prep for Monday's lunch service. I spent today which was my first of two days off picking up some produce at the certified farmer's market, then I headed over to the restaurant supply store to pick up a new stone for my knives. Also stopped by my local to pick up some cigars for a friend and I found out that they were converting it into a cigar club with a smoking lounge complete with plasma TVs. I guess they're either above the law, or the same loophole which is used in San Francisco holds true down here as well. Up there if an establishment was employee owned, they could determine whether or not to permit smoking.
I just hope they provide decent sized lockers because my cup nearly runneth over with premium tobacco at chez axegod :D

I spent my second morning off zesting 20 lbs of Valencia oranges for some homemade Arancello, which for those who don't know is a liqueur or digestivo made with orange zest infused vodka and simple syrup. The zest will sit in the vodka for about 2 weeks, at which time I'll add the simple syrup, bottle it, and store it in my freezer until needed.
I would have made Limoncello also but the price of lemons is ridiculous right now :x
 
20 pounds of oranges, LOTS of work, glad I dont have to do that anymore, I have help to do that, GRANDSONS ! hahahaha Enjoy, Vince

the leaves have started to shange color & I think we will cut grass one more time this season, ( I love winter , no grass cutting, but I hate to move snow , so I hate winter, maybe I should just move into a high rise & let some one else worry about the snow & the grass !)
Nothing in the oven to day or even on the stove , we are having a break today , SALAD, the garden is all about done & there is stuff on the verge of going bad so it is time to get it moved through the digestive tract & turn it into "fertilizer" ( E -Coli enriched veggies hahahahaha )

the New shop is up & running , the phone is 724-774-5611, 1106 Penna. Ave, Monaca Pa 16061 , 10 to 10 6 days a week, Sunday noon to 8 .

My Daugher went to the range with her husband & got up close & personal with his 9MM , first time out 4 shots , 4 dead center Bullseye's , dammmmm she scares me ! Now she wants her own , but a smaller lighter one, mabe a Lady Smith .38, , I like a wheel gun my self, reminds me of the Old wild west with a Colt Peacemaker , not that a Gold cup 45 isnt a fine hand gun I just like the look of a Nickle .357 with a 6 inch vented rib top side & a laser pointer under !

we went for a cigar ride last night like we do almost every Saturday Night & went by the Fountain at Point State Park in da Burgh , & the water is Pink for National Breast Cancer awareness month , Looks good the Gold bridges & the pink water, strikingly good looking . the Sky line of DA BURGH is a far cry from what it was 50 years ago, the air is clean & the skys are blue, Not filled with smoke & fumes from the Mills, BUT the JOBS are gone also , Pittsburgh has moved from a manufacturing community to a medical & educational area , I do miss the steel plants they were the Back bone that BUILT Americia . & I was a Union meber of stelworkers local 1360 for over 17 years , I made a lot of good friends there , & now almost every day I see one of them in the newspapper , Time to dust off the suit & shine the shoes & go Visit for one last time ! & Lately the suit has not needed dust off & the shoes dont need shined, they we just on this week again, they are dropping like flys !

I have been at the shop all week & havent had a lot of irons in the fire to tell you all about, JUST WORK, well its not work when you enjoy it !, & I do !!!
Time for more coffee & a trip out to the Qtr.Deck , I have a little Cuban Jose L. Piedro , that will soon be ashes !

I have a buddy of mine that used to work at one of the coke plants in Pittsburgh. Man, some of the stories that he has told me like standing on top of the coke ovens having to wear wooden soled shoes so that your boots wouldn't melt makes me thankful that I work in a nice climate contolled office building. That is one job that I'm thankful I don't have to do!!
 
I never worked in a coke plant but I did Jack hammer inside a furnace when I was 18 Years old , complete with the wooden shoes , it was a job relining the furnace with fire brick, glad I never had to do it again !!!!!

A Huge oven, , Big enough to get a 13 inch x 13 inch X16 foot hunk of solid steel red hot , & it would heat them as fast as the mill could roll them, back when I was a Wild & crazy Young man, Now I am just an old man , still crazy but no longer as wild ! hahahaha Enjoy, Vince
 
GOOOOOOD MMMMORNINNNNG , Burrrr its a bit chilly here in da burgh this morning , we had a hard frost over night we hit a low of 28F, outside the Qtr.Deck at 5:20 am , the last of the herbs are now black from the frost , dammmm I was hoping to get a few more harvests of the basil ! , Oh well next growing season, I dont care for the taste of the ones I had growing inside, tasted to much like the dammm candles my wife burns at night , great for the Mood setting but not for the taste of the fresh herbs growing on the kitchen window sill.

Ave. Monaca, Pa. 15061, Stop in & sit for a while & have a cigar , a scotch & some coffee or what ever you want to drink with your smoke , the 16 X 20 walkin Humidor is PACKED to the top with FINE cigars & some not so fine cigars to fit evey price range sorry no Davidoffs YET !!!! BUT I am working on it .
we lucked out yesterday , I didnt have to go to a soccer game & watch the grandson play, they we out of town for a wedding & I was able to sleep in a bit , Ahhhhh it felt good , Not braving the early morning chill sans cigar , last week some old fart , ( No not me ) was Bitching about SOME PEOPLE NEED TO SMOKE < well asshat we are OUTSIDE in the wind & I am down wind from everyone , far away from the kids & the field, & if you didnt see the Huge plumes of smoke from my FINE cigar you would have never noticed me , but the lady sitting 3 seats from you with a cigerette was not a distraction as much as my FINE cigar was , dammm Hypocrite , good thing my wife was with me to remind me to be nice to stupid idiots who dont know any better , Thanks Dear !!!
the "Cigar Ferry " has visited here a few time this past week, a Bundle of Olivias showed up on day & a few days later a bundle of Asrotoff Maduros , MY wife said she didnt order them & I didnt order them , so I called the shipper & it seams like some one has my credit card & is sending me cigars ( I think my wife, daughter or grandsons are behind this, I end up paying for them when the Credit card bill comes hahahahaha , But it is a nice thought , Good thing I mark the catalogs & leave them out to be found hahaha )

Grilled ham is on the menu today along with Baked Potatos , I dont feel like going all out today , , the grandsons are off to the football game with there father & my daughter is comming here to eat while they are at the game, , she will be disapointed , since Sunday is the day I cook , but not this Sunday hahahaha

Now that we have had our first hard frost the trees will be loosing there leaves soon, & it will be time to put the lawn chairs away for the winter , No more sitting on the back deck with a cigar , good thing I have the QTR.DECK , I covered the A/C unit all ready & have the baseboard heater all dusted & all the cob webs removed & it is ready to heat up the place , I still havent cleaned the windows hahahahaha, in a few years I will be able to take down the window blinds & it will not make a difference hahahahaha, dammmmm they are looking just fine to me hahahahaha

it is about time for me to jump in the shower & get my buns on the road to go do the pod cast ! Enjoy, Vince
 
Tonight, I have what cA called the best cigar of the year. A Padron 1926 Serie 40 Years, torpedo, box pressed.

It was a gift from the owner of Castro's cigar shop in Nashua, NH. Thanks, Eric.

I'll let you know if Mr. Savona and I agree on this.
